PB Sauce
This sauce is very popular in the Netherlands among students. It is brought to the country by people who came back from Indonesia (it used to be a colony). Peanutsauce is quite heavy, and is normally eaten with rice, cooked vegetables, and sateh. The ingredients are available for sure in tokos.
Ingredients....
- Peanutbutter (350 g jar for about 5 persons, best is a reasonable cheap variety)
- Sambal (Indonesian peppersauce) or if that's not availabe pepper or cayenne
- garlic (quarter bulb)
- sugar, honey or Gulah Djawah (Javan sugar)
- 1.5 liter (soy)milk
- an onion and some oil
- ketjap manis (a soy sauce)
- if you like Santen (a white cocos product) and/or juice of a citron
Cut the onion in small pieces. Bake it in hot oil untill it's brown.
Add the garlic.
Then add the peanutbutter and milk. Stir !
Keep stirring with a wooden spoon, especially on the bottom of the pan to prevent an unnecessary job for your beloved dishwashing partner. The sauce should boil for a while to get the best structure.
Then add the other ingrediënts at your own taste. I suggest (if you use 350g PB) 3 tablespoons of sugar or honey, 1 ts sambal, 3 toes garlic, 7 dl milk, 1 onion.
Keep tasting and adjusting !
Serve hot and use the remains quickly or cool it quickly after use.
Katogo
To cook 'katogo' with peanut butter: fry as many spices as possible, but do
not miss onions, tomatoes and curry. Add your peanut powder and cook for 20 minutes. Add the
whole mixture to boiling bananas and serve when still hot.
